Constructing a Basement Root Cellar

If you've decided that a basement root cellar fills your family's storage needs, the next step is either to build a room in your basement or modify an existing basement room, closet or existing root cellar, preferably one with a window. Your existing root cellar is probably nothing more than an uninsulated large closet with shelves and perhaps a dirt floor.

This type of root cellar worked fine before we began using our basements as living spaces and added heat-generating hot water heaters, furnaces, washers and dryers down there as well. In the twenty-first century we have to insulate the root cellar against the heat of the basement in order to maintain the near freezing temperatures necessary to successfully store produce for winter use.

If you don't have a ready-built room in your basement your root cellar can be designed to suit your family's needs.  You can even design a two-chambered one with a "foyer." The "foyer" is the entrance to the root cellar and has warmer storage temperatures with lower humidity.

The inner room, next to the outside walls, has cooler storage temperatures with higher humidity. High humidity can be further maintained in this room by laying down a three inch layer of gravel and periodically sprinkling water on it. Insulate the wall between these two areas and seal all cracks well with aerosol foam insulation.

Insulate the walls that face the basement, along with the entire ceiling. This will keep the warm air from the rest of the house out of the root cellar. Do not insulate the walls along the outside of the house. These outside masonry walls will conduct cool air into the cellar.

Replace the glass in the window with a piece of plywood.

In far northern areas with extended periods of below freezing weather, make a sandwich of the plywood by gluing a piece of polystyrene foam insulation to each side of the plywood. This will enable you to more accurately regulate the temperature of the root cellar in the deep freeze of winter.

Drill a couple 3-inch holes, as far apart as you can, in the plywood sandwich for the ventilation pipes. Insert a 3-inch diameter piece of PVC pipe into each hole. Install a blast valve at the window end of each pipe so you can open and close the airflow depending on the outside air temperature. Seal around the opening of each pipe with weather caulking or aerosol insulation. Let one pipe come straight into the room from the window, near the ceiling, and cut its length to about six inches. Cut the second pipe to about 4 to 6 inches in length, add a downward facing elbow, then another long length of pipe to bring the end down to just above floor level. Cover each end of both pipes with screen to keep out rodents.

The longer pipe at floor level vents cool air into the root cellar and the higher, short pipe near ceiling level vents warm air to the outside. Make sure to close both valves when outside temperatures dip below freezing. Install a small electric fan to create additional airflow, vital to maintaining top quality of the vegetables.

Consider using an exterior grade door for your root cellar.  This will further insulate it against the warm air of the modern basement. You may want to install a "Dutch" farm door--the door is halved horizontally and each half opens independently of the other. This way you can open the top door to quickly grab some vegetables without letting out all the cold air.
